British Takeover: Eton Mess

What better to have at an American university than a dessert from a British college? Eton Mess is a real treat, traditionally had at Eton College after cricket matches; but it is great anytime, anywhere! This makes a lot of mess (despite an easy cleanup) so make sure you share with your “chums” or “flatmates!”

This recipe includes meringue, so if you’re not keen on real egg whites, there are great recipes for vegan versions online. Just follow these directions for meringue with the recipe of your choice!

You will need:

2 large egg whites

½ cup and 1 tbsp of caster sugar

1 lb of strawberries

2 cups of heavy cream

1 baking sheet

Parchment paper

Tip: While you only need caster sugar, substitute a tablespoon of icing sugar instead for the heavy cream mix if you want to go the extra mile!

Part 1 (Meringue): Preheat an oven to 225° . In a bowl, whisk two large egg whites and gradually add a generous half cup of caster sugar until you have formed stiff peaks. Then put dollops (think the size of a ping pong ball ) onto a baking sheet with parchment paper and place in the oven for 75 minutes. You should be able to easily lift them off the tray, if not, use a spatula.

Part 2: Make a strawberry sauce by mashing one third of your strawberries. In a separate bowl, mix the heavy cream with a tablespoon of sugar until it firms up. Crush three quarters of the meringue cookies and add them with the remaining strawberries into the heavy cream mix, and spoon it out into bowls to serve. Top with the remaining meringue cookies and your strawberry sauce! Enjoy!
